Tout le monde n&#8217;est pas fan de citron. Mais cet appareil cr\u00e9meux au citron est d&#8217;un \u00e9quilibre, entre sucre et acidit\u00e9. Un classique pas compliqu\u00e9 \u00e0 r\u00e9aliser. <\/p>\n\n\n\n<p>Meringue ou pas meringue ?<\/p>\n\n\n\n<p>Il y a toujours les inconditionnels de la meringue \u00e0 l&#8217;italienne pour qui une tarte au citron qui n&#8217;est pas meringu\u00e9e n&#8217;est pas envisageable. Pour ma part, je n&#8217;aime pas la meringue au dessus et je suis donc dans le camp des fans de tarte au citron&#8230; sans meringue! Pour moi \u00e7a ajoute trop de sucre, une affaire de go\u00fbt&#8230; et de palais. Je suis une grande fan de citron et d&#8217;acidit\u00e9 alors forc\u00e9ment :D.<\/p>\n\n\n\n<p>Allez on enfile le tablier et on r\u00e9alise une d\u00e9licieuse tarte au citron \ud83d\ude00 !<\/p>\n\n\n\n<p>Pensez \u00e0 r\u00e9aliser votre p\u00e2te sucr\u00e9e la veille. Cette recette est en plus ultra rapide quand la p\u00e2te est d\u00e9j\u00e0 pr\u00eate, puis de toute fa\u00e7on elle a besoin de repos, \u00e7a tombe bien :).<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><em><strong>Les ingr\u00e9dients (pour un cercle de 22 \u00e0 24cm)&nbsp;:<\/strong><\/em><\/p>\n\n\n\n<p><em><strong>La p\u00e2te sucr\u00e9e : <\/strong><\/em><\/p>\n\n\n\n<ul><li>110 g de beurre <\/li><li>80 g de sucre glace<\/li><li>200 g de farine<\/li><li>20 g de poudre d&#8217;amande<\/li><li>50 g d&#8217;oeuf (1 oeuf entier)<\/li><li>1 g de sel<\/li><\/ul>\n\n\n\n<p><strong><em>La cr\u00e8me au citron : <\/em><\/strong><\/p>\n\n\n\n<ul><li>140 g de jus de citron<\/li><li>150 g de sucre<\/li><li>200g d&#8217;oeuf (4 oeufs)<\/li><li>4g de g\u00e9latine (2 feuilles)<\/li><li>80g de beurre <\/li><\/ul>\n\n\n\n<p class=\"has-medium-font-size\"><strong><em>R\u00e9alisation :<\/em><\/strong><\/p>\n\n\n\n<p><strong><em>La p\u00e2te sucr\u00e9e (la veille) : <\/em><\/strong><\/p>\n\n\n\n<ol><li>Cr\u00e9mer le beurre pommade et le sucre glace \u00e0 la spatule (on obtient quelque chose de cr\u00e9meux)<\/li><li>Incorporer l&#8217;oeuf et le sel.<\/li><li>Ajouter la farine et la poudre d&#8217;amandes et m\u00e9langer \u00e0 la spatule. <\/li><li>Fraiser la p\u00e2te 1 \u00e0 2 fois \u00e0 la main ( cela veut dire \u00e9craser la p\u00e2te avec la paume de la main permettant ainsi de v\u00e9rifier son homog\u00e9n\u00e9it\u00e9).<\/li><li>Mettre \u00e0 plat dans du film alimentaire (ne pas faire une boule mais plut\u00f4t un &#8220;p\u00e2t\u00e9&#8221;). Reposer au frais jusqu&#8217;au lendemain (si vous la fa\u00eetes le jour m\u00eame, comptez 2h minimum avant utilisation).<\/li><\/ol>\n\n\n\n<p><em><strong>Jour J&nbsp;:&nbsp;<\/strong><\/em><\/p>\n\n\n\n<ol><li>Sortir la p\u00e2te 30 minutes \u00e0 l&#8217;avance si elle a \u00e9t\u00e9 r\u00e9alis\u00e9e la veille. Fleurer le plan de travail (fariner l\u00e9g\u00e8rement). Etaler la p\u00e2te sur 3mm. D\u00e9poser le cercle beurr\u00e9 sur la plaque de cuisson couverte de papier sulfuris\u00e9. Foncer la p\u00e2te dans le cercle.<\/li><li>D\u00e9couper le surplus de p\u00e2te avec un couteau ou en passant le rouleau. Piquer le fond de tarte.<\/li><li>Cuire 25 min dans un four pr\u00e9chauff\u00e9 \u00e0 170\u00b0C. La coloration doit \u00eatre r\u00e9guli\u00e8re.<\/li><\/ol>\n\n\n\n<p><em><strong>R\u00e9aliser la cr\u00e8me au citron :<\/strong><\/em> <\/p>\n\n\n\n<ol><li>Hydrater la g\u00e9latine dans de l&#8217;eau froide (10 min). Pr\u00e9lever les zestes de citrons avec une r\u00e2pe.<\/li><li>Presser 140g de jus de citron.<\/li><li>Casser les oeufs dans un cul-de-poule et les fouetter l\u00e9g\u00e8rement.<\/li><li>Mettre les zestes, le jus de citron et le sucre dans une casserole. Fouetter un peu pour dissoudre le sucre et mettre \u00e0 chauffer.<\/li><li>D\u00e8s que le m\u00e9lange arrive \u00e0 \u00e9bullition retirer du feu et verser sur les oeufs en fouettant \u00e9nergiquement afin de ne pas les cuire (si des morceaux apparaissent c&#8217;est qu&#8217;ils cuisent).<\/li><li>Reverser dans la casserole, remettre sur le feu(doux) et fouetter. D\u00e8s la premi\u00e8re \u00e9bullition, retirer du feu. Incorporer le beurre et la g\u00e9latine essor\u00e9e. M\u00e9langer au fouet puis mixer au mixeur plongeant 2 min ou passer au chinois (petite passoire) si votre cr\u00e8me est d\u00e9j\u00e0 bien homog\u00e8ne.<\/li><\/ol>\n\n\n\n<p><strong><em>La tarte : <\/em><\/strong><\/p>\n\n\n\n<ol><li>Afin d&#8217;imperm\u00e9abiliser le fond de tarte (\u00e9tape non obligatoire mais je pr\u00e9f\u00e8re le faire, \u00e0 chaque fois), badigeonner un peu de chocolat blanc fondu dans le fond et mettre au frais 5 minutes.<\/li><li>Couler la cr\u00e8me au citron dans le fond tarte. Lisser. Mettre au frais jusqu&#8217;\u00e0 d\u00e9gustation (minimum 2h apr\u00e8s). <\/li><li>Pour la d\u00e9co, \u00e0 vous de voir :D. J&#8217;ai opt\u00e9 pour une \u00e9criture au cornet avec du chocolat fondu. Petit d\u00e9fi personnel. J&#8217;ai r\u00e9alis\u00e9 ainsi mon premier cornet avec papier sulfuris\u00e9 en suivant une vid\u00e9o sur youtube.
