Mais j&#8217;ai longtemps \u00e9t\u00e9 d\u00e9\u00e7ue par la texture des banana bread. Il y a quelques jours je vous ai partag\u00e9 ma recette chouchou du banana bread comme un cake fa\u00e7on pain d&#8217;\u00e9pices qui m&#8217;a r\u00e9concili\u00e9 avec le banana bread.<\/p>\n<p>Du coup je me suis lanc\u00e9e un nouveau d\u00e9fi : cr\u00e9er un banana bread sans gluten et sans mati\u00e8res grasse avec un jolie texture qui ne laisse pas penser que celui-ci est sans gluten. Je me suis servie pour \u00e7a d&#8217;une de mes association favorites du moment : sarrasin, noisettes et \u00e9clats de chocolat noir, une association que vous avez pu voir derni\u00e8rement dans mes cookies et muffins.<\/p>\n<p>Et si je vous partage cette recette c&#8217;est qu&#8217;elle m&#8217;a conquise. Je me suis r\u00e9gal\u00e9e pendant 3 jours avec mon banana bread (petit-d\u00e9jeuner, collation et go\u00fbter :D).<\/p>\n<p>Et puis ce banana bread sans gluten, en plus d&#8217;\u00eatre trop bon car le sarrasin, la noisette et le chocolat noir \u00e7a match juste trop bien, est sans mati\u00e8res grasses aucune ! Le top !<\/p>\n<p>Alors si vous aussi vous voulez y go\u00fbter c&#8217;est parti \ud83d\ude00 !<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Les ingr\u00e9dients<\/strong> (taille de mon moule :\u00a0fond de 21,5 cm de long\/7cm de haut\/8,5cm de large)\u00a0<strong> :\u00a0<\/strong><\/em><\/p>\n<ul>\n<li><strong>130g de farine de sarrasin<\/strong><\/li>\n<li><strong>50g de poudre d&#8217;amandes + 50g de poudre de noisettes<\/strong><\/li>\n<li><strong>50g de f\u00e9cule de ma\u00efs<\/strong><\/li>\n<li><strong>70g de sucre bio blond de canne<\/strong><\/li>\n<li><strong>150 ml de lait de noisette<\/strong><\/li>\n<li><strong>1 sachet de poudre \u00e0 lever<\/strong><\/li>\n<li><strong>170g de bananes \u00e9cras\u00e9es en pur\u00e9e bien lisse<\/strong><\/li>\n<li><strong>1 pinc\u00e9e de sel<\/strong><\/li>\n<li><strong>1 c\u00e0s d&#8217;ar\u00f4me naturel de vanille<\/strong><\/li>\n<li><strong>\u00e9clats de chocolat noir (72% de cacao pour moi) \u00e0 votre convenance<\/strong><\/li>\n<li><strong>\u00e9clats de noisettes \u00e0 votre convenance + pour le dessus<\/strong><\/li>\n<\/ul>\n<p><strong><em>R\u00e9alisation :\u00a0<\/em><\/strong><\/p>\n<p>Pr\u00e9chauffer le four \u00e0 180\u00b0C.<\/p>\n<p>Dans un saladier m\u00e9langer les ingr\u00e9dients secs (farine de sarrasin, f\u00e9cule, poudre d&#8217;amande et de noisettes, sel, sucre, poudre \u00e0 lever, \u00e9clats de chocolat noir et de noisettes).<\/p>\n<p>Ajouter les ingr\u00e9dients humides (lait de noisette ou amande, pur\u00e9e de bananes, ar\u00f4me de vanille).<\/p>\n<p>M\u00e9langer le tout.<\/p>\n<p>Graisser le moule (avec un peu d&#8217;huile de coco pour ma part). Verser la p\u00e2te. Ajouter des \u00e9clats de noisettes.<\/p>\n<p>Enfourner pour 45 min, surveiller tout de m\u00eame la cuisson car chaque four est diff\u00e9rent. Si vos \u00e9clats de noisettes colorent trop, disposer une feuille de papier alu au dessus du moule pendant les 10 derni\u00e8res minutes.<\/p>\n<p>Sortir du four, (\u00e0 ce moment je verse un filet de sirop d&#8217;\u00e9rable sur le dessus :)). Laisser refroidir jusqu&#8217;au lendemain si possible :D.<\/p>\n<p>Bonne d\u00e9gustation !<\/p>\n<p><em>Personnellement, apr\u00e8s avoir laisser le cake 1 bonne heure \u00e0 l&#8217;air libre, je recouvre mon moule avec une feuille de papier alu et le place au micro-ondes jusqu&#8217;au lendemain. Ce sont des recettes que je pr\u00e9pare toujours le soir pour le lendemain. La texture est bien mieux car si vous le coupez trop t\u00f4t \u00e7a peut expliquer pourquoi vous avez une texture trop humide parfois. Je le garde trois jours car apr\u00e8s il n&#8217;y en a plus. Je le conserve dans le micro-onde recouvert pour le moelleux.
